This old time favorite is slow to bolt with thick textured, crinkled leaves that are glossy and green. Prefers cool soil to germinate. Begin planting in early spring as soon as soil can be worked. Sow seeds 1/2" deep and 1" apart. Thin when plants become baby spinach size to a 3" spacing. Harvest spinach promptly when mature by cutting entire plant just below attachment. Older plants and hot weather causes bolting.
